I have just discovered the yummiest (and healthiest) popcorn EVER!
For those of you that love the sweet and salty popcorn combo then you have to try this. And if you aren’t into the sweet then just use the salt! (but I really encourage you to give the mixture a try. You won’t be sorry!)
For anyone out there still using microwave popcorn – PLEASE STOP!! That stuff is a toxic mix of artificial colours and flavours, hydrogenated oils, preservatives and toxic chemicals… and that is not counting the toxic lining of the bag that it is popped in. It is a recipe for asthma, behavioural problems, stomach issues, allergies, skin rashes and other health issues that we all want to avoid.
Up until now I have been using an air popper to make what I thought was a healthy, low fat snack. The problem with this is that we are consuming a bunch of carbohydrates that will be converted into sugar, raising blood glucose (sugar) levels and providing a short lived energy release followed by a sugar low. Excess glucose will be stored as fat.
My new method is not only the most delicious popcorn I have ever eaten but it also contains healthy fats (read more about this here) which slow down the digestion of carbohydrates, providing a slower energy release that will keep you satisfied for longer and your blood glucose levels more stable. Add this to the other health benefits of coconut oil, the nutrients from celtic sea salt and a super tasty sprinkle of veggies (yes, veggies!!) and you have a delicious, nutritious snack that will keep you satisfied. It also totally hits the spot when you have a craving for potato chips or other salty but not very healthy snacks.
This is a great addition to kids (or grown ups) lunch boxes.

In a large saucepan on medium-high heat, place enough coconut oil to cover the bottom and be about 1/2 a centimeter deep.
Pour in corn kernels to completely cover the bottom of the saucepan and be about one layer thick. Give it a stir to make sure all the kernels are well coated in the coconut oil.
Pop on the lid and leave it on. After a short time the corn will start popping. Wait until the popping sound slows down almost nothing then remove from heat.
Stir in some more melted coconut oil (a few teaspoons is enough) and sprinkle on a decent amount of salt and vital veggie powder.
Mix thoroughly and enjoy while still warm!
You can also pop it into zip lock bags or 4 My Earth snack or sandwich pockets to enjoy later. It keeps well for a few days.
A quick, healthy snack that doesn’t take much longer than that bag of microwave popcorn.
