Healthy Apricot Bites

These are a great alternative to the very delicious but sugar and additive laden apricot bites that are found in the ‘health food’ isle of the supermarket. Not a very healthy choice unfortunately.

This recipe is so quick and easy with just 3 ingredients. Make sure you choose organic dried apricots. They will be a brown colour instead of bright orange which is created by the preservative used in them. Also look for preservative free desiccated coconut. Preservatives 220 – 228 are often used in dried fruits and are best avoided. They can extremely dangerous for asthmatics.

Ingredients:

1 cup organic dried apricots

1 cup preservative free desiccated coconut (plus a bit more to sprinkle on top)

1 tablespoon goji berries (you can find them online here or at health food shops and most supermarkets)

Method:

Place all of the ingredients in a food processor and process until the mixture sticks together when pressed.

Press down firmly into a loaf tin lined with baking paper (I use the If You Care brand because it is free of toxins and can be wiped down and reused several times) and sprinkle some more coconut on top, press it down gently.

Pop into the fridge to firm up and then cut into small squares.

These would also be great rolled into balls.

Store them in the fridge and enjoy!
